Week One

I found out one week ago today that I have multiple food allergies -- wheat, dairy and egg.  Yep, you read that right.  To say it's been overwhelming is an understatement.  Yes, it's only been one week, I have already had a roller-coaster ride of emotions: incredulousness, relief, frustration, sadness, inspired, and so on.  Being a foodie for many years, of course I'm thinking "what in the world am I going to eat?!?!" Well, one week in, I can say, I have eaten pretty well: chicken, vegetables, salmon, fruits, tuna, nuts, to name a few.  But I know I need to investigate calcium supplements.  Not drinking milk? No way! No yogurt? No cheese? No butter? That has been the hardest part of the last week.

I had my follow up doctor appointment today.  My doc says to cut out these things for about two weeks then add one category back in to see how I do. But you know what?  I have to say, I know I feel better.  There has been a noticeable difference in the last week.  No diarrhea, no bloating, no sleepiness in the afternoon, rashes diminishing, a good night's sleep, etc.  Go figure. Why would I add those things back in?

Finding overall information on these food allergies has been easy, but finding recipes for these three allergies (wheat, dairy and egg) together has been challenging.  Most recipes I have found have at least one of those things.

The journey has begun. Not sure where it's going to take me, but I have to start documenting.
